TUNA FUDGE

2-6 OZ cans tuna (or 1-14 oz can salmon or unsalted sardines) – do
not drain; use liquid
1-1/2 cups whole wheat or white flour (if using rice flour, decrease
amount)
1 Tbsp Garlic powder
2 eggs – lightly beaten
handful of grated Parmesan Cheese

Mix all together. Pour into greased 9×9 pan. Bake at 350 degrees
for 20 minutes. Cool. Cut into small squares. Can be frozen.

TIPS: I at least double this recipe and when it’s done I cut into
squares like brownies and put in little snack bags to freeze. After
defrosting, I then cut into tiny squares as I need them. Sometimes I
make all the batter up and then make 1/3rd into salmon, 1/3rd into
Tuna and the last 3rd into sardines :-)))

I’m sure that Dutch would LOVE these, and they’d be a nice alternative to his usual Liver-Sardine treats. I’ll have to make a substitution for the flour because Dutch’s diet is totally grain-free. I’m going to mix in either white or sweet potatoes instead. That should work, don’t you think?
