Ann and I were each lucky recipients of Meyer lemons right off of Carole’s tree in Florida. Now what to do with these lemons! Brittany spent Saturday with me while her Mom was at work. Brittany’s suggestion was lemonade! While we had a fun day nothing was accomplished with the lemons. Today Brittany and Kelly were over helping to groom dogs. In the process we managed to lose Zucca. With 4 deer-hunters on our property and gun shots going off around the surrounding land….we were stressing. Of all my dogs, Zucca is the one that goes deaf when on the trail of a deer. The good news is she was found and is safe.
Back in the house we sifted through Meyer lemon recipes and settled on the Lemon-Fluff pie recipe Carole sent to us. The deciding factor was we could eat it almost immediately. So after some wine, pizza, wine, we ate out Meyer Lemon Fluff pie which we sprinkled with pomegranate seeds. The wine was very good; we decided it would be excellent with Lamb Chops. We also decided the oatmeal crust on the Lemon Fluff pie would be better with a pecan pie filling and the Lemon-fluff pie should be served as a mousse instead.Notice there are THREE Meyer Lemons left!

Julie, you made that pie from one lemon? It looks yummy! Served as a mousse sounds great too. Lemon pie and wine…hmmm, interesting combination! Can’t wait to see what becomes of the other three.

After 30 seconds in the microwave that one Meyer lemon produced more than half a cup of lemon juice! We only needed a third….so we need more ideas for the other three lemons. While the combination with the wine (great spicy wine with a cute cork) was unusual we also had ginger lemon tea later that rounded out the meal…..yum…..yum!
Kelly—you’re killing me! You’re making me homesick for MI, and I’m not even from there! You ladies certainly know how to enjoy a day! Do I need to look for more recipes?
The ginger lemon tea sounds wonderful, but if I hear you are having lamb chops with wine, I just might have to pay a visit.
Brittany says “come on up” as long as you bring Kayla with you! She misses her a lot….
Next I am going to make my favorite lemon mousse—I will just cut back on the sugar

Kelly, I’m not very picky. I’d be happy with whatever managed to get in the mail! Do I need to send more lemons? How handy are you with pink grapefruit??? 🙂
